It's never too late.

Is it just me or does Christmas seem like a month ago? I never posted my Shutterfly Christmas Card so eat your heart out. Well actually it was a "Holiday" Card. I got some flack for being too PC and not getting a card that said Merry Christmas. Please allow me to explain myself, MATTHEW FOX and anyone else who thought the same. It was not possible to get one with all of the color I wanted that said Merry Christmas and didn't have 5 other picture spaces for my non existent kids. I believe Christ is THE reason for the season. Besides, this one fits me. So there.

I love how it turned out and I'm glad I bit the bullet this year and just did it. I will for sure do these every year now. Who doesn't love getting a picture Christmas card?! I for real, may keep them up all year long.

We had a white Christmas this year. It was gorgeous. This is in my neighborhood.
Lastly, I got a new camera for Christmas! Waterproof, shock-proof, Allison-proof. Just what I need. Thanks Santa! And I got a Gorillapod to go with it. So what did I do? Strapped it to my helmet and got on my bike. My first ride with it on was definitely a learning experience. The videos can only get better. Haha . Here's a bite.

The quality is actually way better but I guess Blogger down res-ed it.

Hummus Amongus

Who I stole the treat idea from: I invented it!
Prep Time: 10 minutes tops
# of ingredients: 4
Nutrition info: alright in moderation
Serves: 2 people over a week

Ingredients:
1 Can drained Garbanzo Beans AKA Chick Peas
1/2 Cup sun dried tomatoes with the oil
Garlic Salt and Salt to your liking

Add Chick Peas and Sun Dried Tomatoes to food processor and go to town.

Add Garlic Salt and Salt to your liking. Don't go crazy w/ the garlic. If the hummus is still too thick then drain more oil from the tomatoes into it. Keep blending until creamy and there are no chunks of chick pea.

Hummus goes best with Pita Chips. Put them directly into a Tupperware so you don't eat the whole thing!

Campin Krispies

Who I stole the treat idea from: I invented Rice Krispies Treats!
Prep Time: 3 minutes tops
# of ingredients: 3 to 5
Nutrition info: haha
Serves: 5 but a whole box can serve bunches

Ingredients:
spoonful of nasty margarine (it doesn't have to be refrigerated)
1/3 box of off brand rice Krispies
1/3 bag of marshmallows
Peanut butter and chocolate optional (but highly recommended!)

(I forgot to take a picture of all my ingredients :( Fail

Heat stove to a low burn and begin to melt butter

Once butter begins to melt add marshmallows. MAKE SURE THE HEAT IS NOT TOO HIGH. It will burn the mallows very fast.

MMMMMMMMMMM keep melting a little longer. This is when you'll add choc and peanut butter if you want it.

Turn off heat and add the Kristpies. Make sure to stir from the bottom.

Who says you can't make Rice Krispie Treats when you're camping! OOOeeee

PS you're gonna have to get messy eating them cause you ain't cuttin 'em into squares

Breakfast Casserole

Who I stole the treat idea from: Internet a long time ago...then I forgot it so I adapted it
Prep Time: prep takes about 15min but it cooks for 45min
# of ingredients: 7
Nutrition info: It's breakfast. Do calories count?
Serves: well 7 of us couldn't finish it.

Ingredients:
10 eggs
10 slices of bread
4 cups of shredded cheese
2 cups of milk
1 or 2 things of sausage meat like the picture
A dash of salt
A sprinkle of pepper

Brown the sausage meat and then drain

Scramble them eggs

Slice/rip the bread into little pieces and scatter them evenly across the casserole dish. No need to spray the dish.

Pour milk, and eggs evenly. Then scatter the cheese and meat.

Cook on 350 for around 45 min. I'm bad at the timing but just keep and eye on it.

Don't freak out about the grease in the corners. It's from the sausage. You can soak it up with a paper towel if you're workin on ya fitness. I hope you love it as much as I do. To make for 4, just cut the recipe in half.

Pour all of the Chex into a brownie dish. Drizzle the melted chocolate over that.

Wash hands.
Mix with hands.
Lick hands.

Put all Chex mix into a bag, gradually add in powdered sugar, then shake up the bag until the sugars covers the mix.

Cauliflower Mashpot

Who I stole the treat idea from: I really can't remember. It's from my Weight Watchers days.
Prep Time: Eh 30 minutes?
# of ingredients: 5
Nutrition info: Pretty good assuming you don't go crazy w/ butter and salt.

Ingredients:
One head of Cauliflower
2 Tbsp Parmesan cheese
2 Tbsp butter spread
Garlic & Salt use @ your discretion

Chop up the Cauliflower and then steam it until there's no nutritional value left. You're going to blend it up so don't worry how well you chop it.

Throw everything in the food processor and blend it til its the consistency of mash-potatoes. Then add the garlic and salt to your liking. Don't go crazy cause you can ruin it fast by adding too much.

Voila!
Mmk so this dish is one of those that I think I like b/c it's healthy but to me, it does really taste good. However, I did catch my aunt scrapping it in the trash at one of our family dinners so you be the judge ;)
